I liked tuna salad before vegan. I have my own veganized version using chickpeas. The difference is capers, a cashew based Mayo(Make Your Own recipe) and coconut amino. I had used avocados, seasoned salt(homemade).

Of course I had to try this one. It was the first thing I made. I forgot to take a picture, so I forced myself to make it again. 😂 That is why you saw other posts first.

This is good. Almost as good as mine. I could eat bowls of this and nothing else. 5 stars

Make Your Own: Nutty Date Granola

Who loves granola? I have had many types. Some reporting to be vegan. All reporting to be healthy. Some were. I had not ever used dates as the fruit supplying the sweetness and the glue. The recipe called for Medjool dates and a variety of seeds and nuts.

Now don’t make my mistake. I got sidetracked and baked a little longer than most people would like. I enjoyed the crispness. It was a quick blend of nuts, oats and seeds. You can use any nuts you want. I used walnuts.

One of the dreaded but necessary jobs in the kitchen is to clean out your refrigerator. Let’s face it. Food can die on the shelf in the back of the refrigerator. The crisper drawers can be a veggie graveyard too. Sometimes food begins to go south faster than anticipated.

Yesterday was the attack day. This time I put a big soup pot on the stove and all of the almost gone veggies went into it. I had too-ripe tomatoes and mixed veggie leftovers to add. The cauliflower and cabbage were still good but not enough for a meal. I threw in a few green onions, some organic no-salt seasoning and water into the pot. I let it come to an almost boil and then turned it down to simmer most of the day. My results: a clean fridge and this bounty of veggie broth. Clean, cheap and no preservatives. Feeling good.

Grocery Bill Going DOWN?

I know I haven’t been posting much lately but I have been busy. I am adding new plants to my garden. I finally had to breakdown and clean the above ground bed my husband built before he got sick. While I was away at the hospitals, a neighbor’s cat decided it would make a great litter box. I started that process but I haven’t finished.

Awaiting completion of that job is the organic potting mix and spinach. When the spinach is moved I can plant the Thai Chili pepper that I bought. I will then have three hot peppers, jalapeno, fish and Thai Chili. The yellow and green bell peppers have fruit and more blossoms. I bought an heirloom tomato plant to add to the already fruitful Ace tomato plant.

Grocery bill going ⇓.

Do you know how much non-GMO, organic, heirloom tomatoes cost? I am determined to eat as much non-GMO vegetables and fruit as possible. My budget requires me to grow as much as I can. Garlic and Tumeric are next on my list.
