Clean Fridge Payoff

One of the dreaded but necessary jobs in the kitchen is to clean out your refrigerator. Let’s face it. Food can die on the shelf in the back of the refrigerator. The crisper drawers can be a veggie graveyard too. Sometimes food begins to go south faster than anticipated.

Yesterday was the attack day. This time I put a big soup pot on the stove and all of the almost gone veggies went into it. I had too-ripe tomatoes and mixed veggie leftovers to add. The cauliflower and cabbage were still good but not enough for a meal. I threw in a few green onions, some organic no-salt seasoning and water into the pot. I let it come to an almost boil and then turned it down to simmer most of the day. My results: a clean fridge and this bounty of veggie broth. Clean, cheap and no preservatives. Feeling good.

After 1.5 years I did it!

I have tried other people’s recipes. I have experimented with my own. Today I accomplished my goal. I just threw ingredients in a bowl. Stirred them and put them in a cast iron skillet. What is it you ask?

Oil-free, vegan, gluten free Cornbread

It tasted good. It did not break-up or crumble.

What’s that? Oh, ingredients.

  1. Gluten-free oat flour 1 cup
  2. Organic cornmeal. 1 cup
  3. Pureed banana. 1
  4. Cashew milk. 8 oz
  5. Aluminum free Baking powder 2.5 Tbls
  6. Puree banana in milk
  7. Bake 375° F for 20-25 minutes

It was great with vegetable soup. I guess the best happens when you are not trying too hard.

My Garden Beginnings

I have been thinking of beginning my own organic container garden but I just kept putting it off. I am not a natural garden interest type person. I just like the fresh produce. One day I was standing in my favorite organic market looking at the cost of vine ripen organic tomatoes and thought if I had started my garden by now I would have my own. I then moved to the yellow bell peppers and the cost of those were ridiculous.

That’s it. I am starting this garden I declared inside.

I bought organic soil and fertilizer after conferring with a successful gardener friend. I proceeded to the plant section to discover that they sold organic seeds but not organic seedlings. I googled organic nurseries in my area and found one very close to my home. I thought they only sold landscape vegetation. I discovered they sold non-GMO organic vegetable plants.

Inside myself again I screamed “Yes!”

I bought yellow onions, green onions, jalapeno pepper, green bell pepper, yellow bell pepper and tomato plants. I spent approximately 15.00 for a sustainable supply of veggies.

The other thing I did to insure some of these plants had a chance at survival was to purchase a self-watering container. It holds two gallons of water and the plants drink as they need it. The tomato and jalapeno plants are in a conventional pot. I pray I don’t kill it. My thumb is real light green.
