I finally ground the dehydrated beet pulp. Why buy beet root powder when you can make your own? All you need is the dried pulp and a grinder. I used my Nutribullet grinding attachment but a coffee or spice grinder will probably work just fine. I gave it a try this mornig. I put 1 tablespoon of the powder in my waffle mix. The batter was pink. I expected pink waffles. Didn’t happen. They were regular waffles . The beet flavor was barelty noticeable. The waffles tasted good. Results were nutrition boosted waffles.
For several months I’ve been reading about aguafaba and it’s uses. I even saved it in the fridge. Didn’t use it though. Oh, wait. I assume you know what it is. It’s the liquid or pot liquor as they call it in the south left after you cook chickpeas. Most of us toss it after straining the chickpeas. I finally used it in my gluten free waffle recipe.
Now you can’t just pour it in. It has to be whipped. I am lazy so I used my immersion blender instead of a whisk to do the work.
After I achieved a whipped egg white consistency, I added it to my batter. Like egg whites, the aguafaba adds moisture so I slowly added the milk a little at a time. I didn’t want to make the batter to liquidy. The results were beautifully crispy on the outside, tender on the inside waffles. Aguafaba will definitely be added to my egg replacement arsenal.

I forgot to take a picture before we began eating so I had to snatch my hubby’s plate from his hands.
This mix is a blend of Einkorn flour, brown rice flour, Amaranth, Tapioca flour,Sorghum flour and Garbanzo(Chickpea) flour.
My first try was edible and that’s all I can really say about that. I left iut the syrup and the vanilla flavoring. You wouldn’t think that would matter but it did. The vanilla, not so much but the removal of the sweetener was a mistake. Because I’m vegan I used E-nerG egg substitute. I didn’t let it sit long enough before i used it.
On my next try, I used blue agave sweetener and I allowed the egg substitute to fully complete its transformation.
The batter was a little thicker than I like but the waffles were much better. I will try again using the egg replacement equivalent of 2 eggs and I may add a little more milk if needed. The Einkorn really absorbs the liquid. I will keep you posted.

The struggle continues to find substitutes for oil that works in my food. I finally succeeded with my waffles. I have tried pureed applesauce with no success. Tried a blend of pureed applesauce and avocado. That was better but not quite right. Saturday I decided to try just pureed avocado. Success! I added this to my vegan, gluten-free mixture and found success.
Now I will try this with my cornbread. Southern upbringing requires good cornbread. Anyone out there with a good cornbread recipe? Biscuits? Not sure I’m ready for green biscuits.
Okay that might be a little dramatic but it is actually what I thought when I opened the waffle maker. My next thought was candidate for a SyFy scene. I opened the waffle iron and saw green and brown waffles. It doesn’t show how dark green but the dark grid lines were green.I don’t know what in the ingredients caused this phenomenon. I used buckwheat flour, almond flour, baking soda, baking powder, almond milk, salt, coconut oil and eggs. Does that sound green to you?
The Experiment
Use a whole wheat flour waffle recipe as a guide.
Change the flour to another grain or combination of grains.
Use coconut oil instead of shortening.
Almond milk and baking soda instead of buttermilk.
The Discoveries
Baking soda was added because I didn’t have buttermilk. Â Must have added too much because the taste was really strong.
Didn’t need the baking soda at all on further research
1/2 cup of coconut oil was too much for the flour combination.
Let the batter sit about 5 minutes to thicken before pouring in the waffle maker.
And then there is green.
After removing from the waffle iron and a little cooling, the color changed to golden brown.
The Whole Wheat Recipe      My Changes
2 c whole-wheat flour           1 c buckwheat flour, 1 cup almond flour
4 tsps baking powder            2 tsps baking powder, 2 tsps baking soda
1/2 tsp salt
2 eggs
1/2 c melted shortening          1/2 c coconut oil
1 3/4 c buttermilk               1 3/4 almond milk
